- 2 slices of your favorite bread (whole grain, ciabatta, or sourdough are great options)
- 1/2 cup of hummus (store-bought or homemade)
- 1/4 cup of roasted red peppers, sliced
- 1 small zucchini, sliced into thin rounds
- 1 small yellow squash, sliced into thin rounds
- 1 small eggplant, sliced into thin rounds
- 1 small red onion, sliced into rings
- 1 tomato, sliced
- A handful of fresh spinach or arugula
- Olive oil
- Salt and pepper to taste
- Prep the Veggies:
- Preheat a grill or grill pan over medium heat.
- Lightly brush the zucchini, yellow squash, eggplant, and red onion slices with olive oil. Season with salt and pepper.
- Grill the veggies for 3-4 minutes on each side, until they are tender and have nice grill marks. Remove from the grill and set aside.
- Prep the Bread:
- Lightly toast the bread slices if desired.
- Assemble the Sandwich:
- Spread a generous amount of hummus on one side of each slice of bread.
- Layer the grilled vegetables on one slice of bread.
- Add the roasted red peppers and tomato slices on top of the grilled veggies.
- Add a handful of fresh spinach or arugula.
- Place the other slice of
- bread on top, hummus side down.
