• 2 slices of your favorite bread (whole grain, ciabatta, or sourdough are great options)
  • 1/2 cup of hummus (store-bought or homemade)
  • 1/4 cup of roasted red peppers, sliced
  • 1 small zucchini, sliced into thin rounds
  • 1 small yellow squash, sliced into thin rounds
  • 1 small eggplant, sliced into thin rounds
  • 1 small red onion, sliced into rings
  • 1 tomato, sliced
  • A handful of fresh spinach or arugula
  • Olive oil
  • Salt and pepper to taste
  1. Prep the Veggies:
    • Preheat a grill or grill pan over medium heat.
    • Lightly brush the zucchini, yellow squash, eggplant, and red onion slices with olive oil. Season with salt and pepper.
    • Grill the veggies for 3-4 minutes on each side, until they are tender and have nice grill marks. Remove from the grill and set aside.
  2. Prep the Bread:
    • Lightly toast the bread slices if desired.
  3. Assemble the Sandwich:
    • Spread a generous amount of hummus on one side of each slice of bread.
    • Layer the grilled vegetables on one slice of bread.
    • Add the roasted red peppers and tomato slices on top of the grilled veggies.
    • Add a handful of fresh spinach or arugula.
